| 0600 Production Bakery Doralisa told Kimmy to start greasing pans. She saw Hector come in he would help empty a fifty pound bag of devils food cake mix into the mixing bowl. Sunday was going to be bit of let down but still there was lots of work to be done. Tejano music was played in the background. Yesterday had been a big day. The days though all had a degree of sameness to them. Pan after pan after pan after pan was greased. The mixture was followed as ingredient after ingredient were poured into the new mixing bowl. The new equipment was nice but the loss of old hands was not. Doralisa pondered and realized the guy while wanting to improve had little grasp on how people needed delicate handling. For the first time in a long time there was palatable fear. Things a big were getting worse.

0600 Rio Loco Bernando had been watching the temps on the smoker. The secret of Sea World was that Rio actually smoked the brisket over night. The blend of hickory and mesquite added flavor. It was a simple recipie for taking care of brisket. There was no MSG just salt pepper and smoke. The sercret of Rio was known to a few guests. The brisket was like Rudys a bit more expensive but it was in the park. The simple fact of the matter is that khaki shirted park workers had a taste for the pork ribs and the brisket.

0600 Oaks Andrea went to the walk in she got a box of patty sausage. There had been a growing separation between Oaks employee and Oaks main. They were now more closely dividing accounts. Oaks employee was the breakfast joint in the morning the only breakfast joint in the mornings on weekends. The menu was simple the stick to ribs shot of fat and sugar. There were two kinds of scrambled eggs. Biscuits were a standby sausage bacon and some sort of bread pancakes or French Toast. There were also goodies form production bakery. White gravy was served with every breakfast it seemed. There were also tacos to be made. The sausage was fried up on the new grill. There were several large half pans filled and they were placed in the warmer. Anita started placing biscuits in a sheet pan to be baked in a small oven. Once placed in an oven the biscuits would be placed in a holding unit to keep them at the appropriate heat till they would be served. In another location a couple runs of bacon were quickly grilled. |
| 0700 Oaks Employee The breakfast in small portion was out. A couple members of night park ops walked through the line. It was a trickle but the extended ours were welcomed. The coffee pot was popular for the rides crews that had just arrived. The Sea World employee breakfast was half the price at a fast food place would charge and every bit as good. Oaks employee served Royal Cup coffee which had a stout flavor but only moderately rich in caffeine for some who liked there coffee with cream and sugar it was welcome. Vanessa who was the biker babe of the group held court cracking a couple jokes. Joe White from Helotes commented about how strange it was to breath clean air and how he missed the demise of mulchie. |
0700 Sweet Treats
The Commissary run was just about done. The white pick up truck had six empty pallets piled up in its bed and stacked. The steakbed had several piles of empty Pepsi cases that the bottles of Aqua Fina and other bottled drinks all stacked to about six feet high. There were several speed racks full of empty sheet pans. There were also about eight empty speed racks. There was an assorted ten empty milk cases. It was all organized Jose believed in organization. There were also pallets stacked high. They full truck made its run to the production bakery.

0700 Production Bakery Over and over over and over again. The mix for the chocolate cakes had to measured the mix was put into the pan weighed adjusted. This process repeated till over 200lbs of the batter had been poured into chocolate cake pans. Doralisa looked back into the storage area of the production bakery she went quickly into the office she realized she would have to do a hot shot the warehouse crew was on the way so the problem would be taken care of it just was wasting time.

0730 Production Bakery![]() The speed racks arrived at Production Bakery as the sun peaked above shamu stadium. Eva headed back to the warehouse whole Jose and Stippy unloaded each one.

0730-0800 Oaks The landscape crew went into Oaks. The plates were full of high fat food and they took a load off their feet. The coffee flowed they had watered between them a large volume of plants every plant that hung on assorted posts through out the park and other displays had been watered with condensate from the two big condensate tanks. |
